apple crumble cake

This delicious Apple and Cinnamon Crumble Cake is a great way to use up all of those apples before they disappear.

We can’t say it’s “super healthy” but it is a really tasty treat and something you could make for the weekend for everyone to enjoy.


Preheat fan oven to 180c


combine ...

1.5 cups self raising flour

1 heaped teaspoon baking powder

3/4 cup caster sugar

2 eggs

120ml sunflower oil

120ml greek yogurt

Shake of cinnamon 

Dash of vanilla or almond extract

2 eating apples chopped into 1cm cubes


Mix together and spoon into a lined cake tin.


crumble topping ...

Mix 1/4 cup caster sugar

1/4 cup light brown sugar

A hefty shake of cinnamon 

Tablespoon of butter

Pinch of salt

Into a paste


Dollop on top and swirl across top not mixing into batter too much. It should sit on top.


Cook for 35-40 mins.


Take out and cool. 


icing ...

Mix 1/4 cup icing sugar with a drizzle of milk to make your runny glaze and drizzle over the cake.

You can throw some hedgerow berries in as well for some contrast in colour and taste- blackberries or elderberries.
